Mag’s Simple Masala Vege Fried Rice

Long grain white rice (Left over rice) – 1 cup

Hard Tofu,sliced

¼ carrot, peeled and sliced

Show peas. Sliced  – ½ cup

Onion, trimmed, finely sliced

Garlic, chopped – 1 clove

Green chilli, sliced – 1 nos

Garam Masala, pinch

Vegetable oil – 1 tbsp

Pepper, pinch

Salt, as needed


Heat oil in frying pan over medium heat. Add garlic, onion and chilli.  Cook for less than 1 minute.

Add tofu to pan. Cook until the tofu become light golden brown about (1 minute). Add carrot and show peas. Stir fry 1 minute. Add rice, salt, garam masala and pepper. Keep stirring for about 2 to  3 minutes. Stir until heated through. Serve immediately, with vegetable salad.


You can also add mushrooms, long beans and green peas.
