Paleo (sugar free) Pancakes
You will need:
1 Tbs coconut flour
1-2 Tbs almond butter
1/4 cup chopped nuts of choice – walnuts or almonds are a personal favourite
1 tsp. coconut oil
Dash of sea salt (to taste)
Mash bananas in a bowl.
Add the eggs, coconut flour, almond butter, blueberries, and nuts and salt, and whisk until well blended.
Heat a large non-stick skillet over medium heat along with a small pat of coconut oil.
Pour the batter in small circles onto the hot pan. Keep in mind it’s easier to flip if you keep your pancakes far from the edges of the pan.
When the batter looses its ‘stickiness’ around the edges and starts to slightly bubble, flip over and cook on medium heat until full cooked.
Add a little more oil to the pan after each batch of pancakes.
