Sugar Free Granola

Finally I have found a granola recipe which won’t send you bouncing off the walls! This recipe is adapted from Sarah Wilson’s version.

WHAT YOU’LL NEED:

  • 4-5 tablespoons coconut oil (or butter), melted
  • 2-3 cups coconut flakes
  • 2 cups organic rolled oats
  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 2 cups activated nuts – I throw in what ever is in my cupboard  e.g. almonds, cashews, pecans, brazil nuts, walnuts, pepitas, sunflower seeds, chopped roughly
  • 1-2 tablespoons rice malt syrup (optional; play around with this depending how sweet you want it)

HOW TO MAKE IT:

Preheat oven to 120 C.

Heat oil in saucepan. Mix all ingredients in a bowl, spread evenly on baking paper on a tray and bake for about 15-20 minutes, until golden, turning halfway.

When golden, remove and cool immediately to get it crispy. Once cool store in airtight containers.
