Sweet Potato Fry

Sweet Potato Fry
Yield: 4 servings 
2 tablespoons olive oil
1/2 medium onion, diced
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and freshly ground black pepper


Heat the olive oil in a skillet or sauté pan over medium-high heat, and cook the onions until softened, about 3-5 minutes.  Add the garlic and cook for a minute more.  Add the sweet potatoes and season with salt and pepper. Reduce the heat to medium-low, partially cover, and cook – stirring often – until potatoes are softened, about 12-15 minutes.  Stir in the fresh chopped rosemary and thyme, and season to taste with salt and pepper.  Serve.
