Muesli Cookies


-2 tbls nut butter

4 chopped and pitted dates

1/4 cup oats

1/4 cup bran flakes

1/4 cup shredded coconut

1/4 cup almond meal

1/8 cup buckwheat 

1/8 cup chopped nuts and berries (any) 


Preheat oven to 200 degrees ( 180 fan forced). melt the nut better and 1/2 cup chopped dates with enough water to get a sort of runny paste, I used about 5 tbls and melted it in a saucepan, then took  it off the heat before add the other ingredients. Pour the rest of the ingredients into the nut date paste and mix until combines. Roll into balls, flatten and bake for 5 to 10 minutes. Can also not be baked and used as ‘raw’ food balls if refrigerated.
