Banana, Carrot and Walnut Bread

Ingredients:

2 very ripe bananas

2 eggs or 2 tbsp of ground chai seeds and almond milk for vegans

4 fresh dates

1 large carrot

1/4 cup brown rice flour

1/4 cup buckwheat flour

1/4 cup shredded coconut

1/4 cup rolled oats

1 tsp baking soda

1/2 tsp baking powder

lots of cinnamon and nutmeg

Method:

Process banana, dates and eggs (egg substitute). Stir through grated carrot, sift in all flours, spices and baking powder and soda. When combined, stir through coconut and oats, place in loaf tin and top with chopped walnuts. bake for approximately 30 minutes or until cooked.
