Carrot Ginger Crunchy Sauce


1 large carrot

1 small onion

2 tbls roughly chopped ginger

2 cloves of garlic 

1 tbls balsamic vinegar

1 tbls olive oil

pepper, cumin and chilli

1 tsp lemon zest

chopped clinatro


Put carrots into the food processor until you get a crunchy consistency (not pureeed). transfer mixture to a blender, add ginger, onion, garlic, vinegar, oil and spices. Add a dash of water and blend for a few seconds. Feel free to add some sunflower seeds, pinenuts, pumkin seeds ect… At the end introduce the cliantro and lemon zest.
