Chewy Apricot, Date and Coconut Cookies

In a large bowl mix together:

1 cup rolled oats

3/4 cup oat bran

1/2 cup shredded coconut

2 tbls chai seeds

1 tbls flax seed meal

1 tsp cinnamon 

1/4 tsp Himalayan pink salt

Once combined add:

1/4 cup sunflower seeds

1/4 walnuts

1/4 cup apricots

1/4 dried dates

Then lastly add:

3 very ripe bananas

2 tbls honey ( or sweetener of your choice)

1/4 cup melted coconut oil

1 tsp vanilla

Roll tablespoons of the mixture into compacted balls, place on a greased tray and press down to flatten with the back of a spoon. Bake at 175 degrees for 25 minutes until golden brown and leave to harden on a baking rack.
