Corn Fritters

Serves 2


1 fresh corncob

2 medium eggs

1/2 cup wholemeal self raising flour

1/2 cup soy milk

2 spring onion

olive oil spray

2 tbls mint leaves



Place the corn cob uprights and cut away the kernels. Wisk the eggs in a large bowl with a fork. Stir in the kernels, flour, milk and half of the spring onions. Lightly spray a large non-stick pan with olive oil and heat on a medium-high. Drop 1/4 cup measures of the egg mixture into the pan. In batches, to make 6 fritters and flatten each with the back of a spoon. Fry for 3-4 minutes on each side until golden brown and cooked through. Serve immediately sprinkled with mint leaves and the remaining spring onion.
