Spicy Sweet Potato Fritters

You will need (serves 2):

  • 1 Medium, Organic Sweet Potato
  • 3 tbsp Flour of your choice (I like quinoa, oat or chick pea flour)
  • 2 Free Range Organic Eggs
  • Spices of your choice to liking (I like Ground Black Pepper, Ground Chilli, Garlic, Nutritional Yeast (highly recommend) and a pinch of Himalayan salt)

Prepare the sweet potatoes as you usually would. Then peel, and mash-up. Add the Remaining ingredients, mix well and cook in a non stick pan on medium heat. Enjoy
