Vegetable and Barley Soup


1 tbls olive oil

1 brown onion

3 stalks of celery

2 cloves of garlic

1 tsp turmeric

6 cups vegetable stock

1/2 cup pearl barley

1 large carrot

1/2 cup red lentils 

200g green beans

1/2 cup coriander



Heat olive oil in a a large saucepan on medium- high. Cook the onion, celery and garlic for 5 minutes until softened then stir in the turmeric and cook until fragrant. Add the stock and barley, bring to the boil and simmer, covered, for 30 minutes. Stir in the carrot and lentils and simmer covered fro 5 minutes. Add the beans and simmer for 10 minutes until the vegetables, barley and lentils are tender. Serve with coriander.
