Zuchinni Pancakes

  • 2 free range, organic Eggs
  • Half a banana, mashed
  • Half a medium zucchini, grated
  • 20 gr. of protein powder, or flour of your choice (I personally like mine with either vanilla protein powder, coconut flour, quinoa or oat flour)
  • Stevia and ground Vanilla to taste

Mix the ingredients and cook in  a non stick pan on medium to low heat. Serve with fruit, nut butter or topping of your choice and enjoy.
