Cacoa Peanut Balls

You will need:

1/3 cup /70g almonds
2 tbsp/15g chia seeds
2 tbsp/15g flaxseed
1/2 cup/90g medjool dates (Or dried dates soaked in hot water for 15 minutes and then drained)
3 tbsp/ 20g raw cacao powder
1/2 cup/40g peanut flour
Sweetener if necessary
1 cup cooked quinoa (1/3 cup dry quinoa cooked in 2/3- 1 cup water for 15-20 minutes)
Cacao nibs to roll in
 
Combine all the above ingredients to make a thick dough, excluding the quinoa, in a food processor, adding a little water if it is too dry. Once it has reached the desired texture, add the quinoa and processed until well mixed. Transfer into a bowl and refrigerate for at least an hour, then roll into 8 balls and coat with the cacao nibs. Store in the fridge for up to 2 weeks, if they last that long!
