Goey Chewy Nut Date Squares


2/3 cup peanut butter

 10 fresh dates (chopped)

 3tbs water

 1 cup mixed nuts… I used almonds, cashews and brazil

 1/4 cup sunflower seeds or pepitas

 1/2 cup dried fruit… I used goji berries and raisins

1/4 cup coconut flakes or dedicated coconut

2 tbs maple syrup (optional)


Line a springform tin with baking paper and set aside. In a pot over low heat melt peanut butter, chopped dates, water and maple syrup. As it begins to melt, keep mixing and use the spoon to squish up the dates.. This helps them break down and go all goey with the peanut butter. If it feels to heavy and thick add another tablespoon of water to help loosening it. Add in your mixed nuts, fruit, coconut and seeds and mix well. Make sure all ingredients are coated nicely then transfer the mix into your lined tray. The mix will be super sticky so try your best to push it all down nice and firmly. With sticky mixes I usually put an extra sheet of baking paper on top of the mix then squish and smooth it all out. It’s a lot easier and no sticky spoons or hands!! Put into the freezer to set for 1-2 hours. I made these extra special by putting a sneaky layer of raw choccie on top.. 5 tbs melted coconut oil with 3 tbs cacao powder mixed well and poured over the top.
